12:00pm: High Noon Chef's Meeting
Officials will introduce the competitors and explain the rules. The Chef who wins a coin toss rolls the "Cage of Mystery" to reveal the Secret Ingredient for the day. Secret ingredients are not predetermined. Each chef team will then adjourn to plan their Three Course Menu (can be any type of dish, doesn't have to be appetizer, entree, dessert)
12:30pm: The Requisition
Based on their menus and amount of reservations, the "Chef Ref" will allocate requested proteins to each chef. This will be a non-replaceable requisition so don't mess it up!
12:45pm to 6:00pm: The Preparations
Chefs spend the day preparing for service. Both teams are working in the same kitchen under the supervision of the ChefRef who enforces the rules. Lunch will be provided for teams by Crippen's.
6:00pm: The Huddle
Each chef will meet with officials and decide on the order of service. Dining room staff will then be briefed on specific markings for each course.
6:30pm: The Introductions
Guests arrive and are seated. Tables of two to three will be seated with other diners. Tables of four or more will be seated at their own tables unless they don't mind or want to sit with other parties. Jimmy Crippen will do the introduction and give diners a "Crash Course in Food Critique" and how to fill out their judging forms.
7:00pm: The Service
Teams will cook their respective courses. ChefRef will expedite. Jimmy Crippen will tell the diners what they are eating. There will be no written menu. Diners will judge each dish on their judging form as they eat.
9:30pm: The Collection
Officials will collect diner's judging forms for tally. Diners will close out their tabs. When tally is finished, Jimmy Crippen will bring out the Chef Teams, do a quick interview with each chef, reveal the dishes and the highest scored dishes. A winner is then announced and presented with a check for $500.
10:00pm: The Afterparty
All are invited to the bar for a meet and greet with the chefs and their teams.
